Peanut Butter Scotch Bars

These are the bomb! And probably fattening; no they are fattening! And full of peanuts! A 1 1/2 inch square has 134 calories and 9 grams of fat, so take that into account if you've been lounging around all day.  You might want to consider a walk after eating these, because you can't just eat one!

Peanut Butter Scotch Bars

15 whole graham crackers
3 Tbsp. sugar
pinch of salt 
6 Tbsp. unsalted butter, melted 
1 11 oz. package of butterscotch morsels
1/2 cup peanut butter
1 cup chopped salted roasted peanuts (I like honey roasted)

- Line a glass 9" pan with parchment, allow the ends to overhang the pan.
- Process crackers until finely ground.  The process again with sugar and salt.  Pulse in butter.  Transfer to pan.  Press crumbs down firmly.
- Melt butterscotch in a bowl in the microwave.  Don't overheat- you'll have a brick. Stir in p.b. and peanuts.  Spread over cracks crust evenly.  Chill for an hour or til firm.
- Lift parchment out of pan and cut in squares.  Great for a bake sale or anytime.
